At the heart of the operation is a process called aeration. The dispenser utilizes a nitrous oxide (N₂O) charger, a small steel cartridge filled with the gas. When this charger is screwed into the dispenser's head, the gas is released into the canister containing the liquid cream.

Here's a step-by-step breakdown of the mechanical process:

Filling the Canister: The process begins by filling the stainless steel canister with heavy cream, often sweetened and flavored to taste. It is crucial not to overfill the dispenser to allow enough space for the gas to work its magic.

Charging with Nitrous Oxide: The head of the dispenser, which houses the charger holder and the dispensing mechanism, is then securely screwed onto the canister. A nitrous oxide charger is placed into the holder, and as the holder is tightened, a pin pierces the charger, releasing the N₂O into the canister with a distinct hiss.

The Science of Aeration: Under the high pressure created by the released gas, the nitrous oxide dissolves into the fat molecules of the cream. This is a critical step; the gas is essentially being infused into the liquid. To facilitate this process, the dispenser is typically shaken vigorously a few times.

Dispensing and Expansion: When the lever or trigger on the dispenser's head is pressed, the internal pressure forces the cream-and-gas mixture out through a nozzle. As the mixture is released from the high-pressure environment of the canister to the lower atmospheric pressure outside, the dissolved nitrous oxide rapidly expands. This expansion creates millions of tiny bubbles within the cream, instantly transforming it into the fluffy, stable foam we know as whipped cream.

The design of the stainless steel dispenser is crucial for both its functionality and durability. The robust metal can withstand the high pressure exerted by the nitrous oxide.
