What is a 2g Nitrogen Charger, and what is it used for?
A 2g nitrogen charger is a small, sealed cylinder containing 2 grams of highly pressurized, food-grade Nitrogen gas (N₂). It is designed to be used with a whipped cream dispenser or a specialty infuser. When pierced by the dispenser's mechanism, the gas is released into the container.
Contrary to what the name might suggest, its primary use is not just for whipped cream. While it can be used for that, Nitrous Oxide (N₂O) is the gas that creates the classic sweet, airy foam. Nitrogen, however, is used for a different purpose: it creates a much tighter, smaller-bubbled foam with a thick, creamy mouthfeel. This is famously used in Nitro Cold Brew coffee and certain types of beers to give them that signature cascading effect and silky texture. It's also used for rapid infusions of flavors into spirits and liquids (a technique known as "whipping" without the cream).
